My favourites are Suretrip 49% and Suretrip II by Checkpoint, Fantasia by Dune and Pacemaker by Paradox.

Whilst not disagreeing with the previously expressed choices, I would like to add http://www.pouet.net/prod.php?which=51962 by the Dead Hackers Society. Loads of fullscreen overscan stuff for the STe
